Oatmeal-Walnut Pancakes
Ingredients:
1 cup whole wheat flour
1 cup regular oats, uncooked
1/2 cup plain cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 cup finely chopped walnuts
2 large eggs, lightly beaten
2 1/4 cups water
1/4 cup honey
1/4 cup vegetable oil (for fat-free use 1/4 c unsweetened applesauce)
DIRECTIONS
Put all ingredients in a large bowl. Mix. Let stand at least 10 minutes.
Pour 1/4 cup batter per pancake onto a lightly greased griddle or skillet.
Cook until tops are covered with bubbles and edges look cooked.
Turn and cook other side.
Yield: 20 4" pancakes
